Apple Pasta Salad

2 cups cooked pasta, cooled

½ cup walnuts, roughly chopped

1 cup shredded sharp white cheddar cheese

1 large apple, sliced thin

2 cups cabbage, sliced thin

1 cup red grapes, halved

2 cups lettuce of your choice (we used red leaf)

For the dressing

6 oz. Malus (reserve the rest for drinking)

¼ cup olive oil

⅓ cup seasoned rice vinegar

1 teaspoon salt

Fresh cracked black pepper

In a large bowl, combine all dressing ingredients in a bowl and gently whisk. Add sliced apples and cabbage and thoroughly mix. Cover with plastic wrap, remove all air, and refrigerate for 1-2 hours until quick pickled to desired texture and flavor. Prep all other ingredients.

Combine all ingredients and serve immediately.
